Chef's note

Toast the sesame paste in a dry pan for 30 seconds before adding liquid. This is the single biggest thing that separates a bland bowl from the version you'll think about the next day.

Keep the pork coarsely crumbled — not a puree, not a patty. You want craggy edges that catch the sauce and crisp on contact with the pan.

Finish with a drizzle of chili oil and a generous pinch of toasted sesame seeds. Eat immediately — the noodles do not wait.
