Cleaning and disinfecting are two different jobs. Cleaning uses soap or detergent and water to physically remove grease, food, and dirt. Disinfecting or sanitizing uses heat or an approved chemical to kill germs on an already-clean surface, so you always clean first, then sanitize. The right product depends on the material, because what protects stainless steel can ruin stone, aluminum, or a nonstick pan.
Two rules before anything else. Never mix bleach with vinegar or any acid, and never mix bleach with ammonia. Both make toxic gas. When in doubt, use one product at a time, rinse, and open a window.
