Fat, sweet, and aromatics: flavor and char
Fat is the delivery system. It dissolves the fat-soluble flavors, the aromatics, chiles, and spices, and spreads them across the surface. It does not soak in, meat is mostly water and oil and water do not mix. A thin film helps the surface brown, but scrape off the excess before a sear or the wet coat just steams.
Sweet balances the salt and feeds browning and char in the pan. Reducing sugars like honey and brown sugar brown fastest, and sugar starts to scorch not far above where it browns, while a grill runs 450 to 600F. So cook sweet marinades over moderate heat, or brush sweet glazes on only in the last couple minutes, and watch for dark spots.
Aromatics (garlic, ginger, and friends) are pure surface flavor, bloomed by the fat and the heat.
